SAUSAGE & TRI-PEPPER BOWTIES

This recipe is perfect for meal prep. It combines a lot of good flavors and I love that it’s still good up to a week after I make it.

Prep Time: 35 minutes | Yields: 4 servings

INGREDIENTS

  • 🌶 3 bell peppers, sliced (green, red, yellow)
  • 🌶 1 sweet onion, sliced
  • 🌶 3 mild or hot Italian sausages
  • 🌶 3 cloves garlic, minced
  • 🌶 1 can diced tomatoes (14.5 oz)
  • 🌶 SPICES: Salt, black pepper, oregano, rosemary, parsley, thyme

CREATE

  1. Heat olive oil in large pot. Brown sausages, turning them over as they brown. (~12 minutes)
  2. Remove the sausages and slice. Add the sliced onions and garlic to the pot; sauté. Once softened (~3 minutes) add the peppers and sauté. Add in all the spices, let simmer until softened.
  3. Pour diced tomatoes into pot. Add 1/4 cup of heavy cream or half and half to pot to thicken sauce. Stir and let simmer for about 10 minutes.
  4. Add in cooked bow ties; mix everything together and serve.
