PESTO ASPARAGUS & TOMATO CHIX PENNE

This recipe is fantastically simple because it only has five ingredients. (And a couple extra if you want extra creaminess and flavor.)

Yields: 3 generous servings

Ingredients

πŸ… 1 chicken breast, cubed
πŸ… 1 pint cherry tomatoes, halved
πŸ… 1/2 lb asparagus, chopped into 1-inch pieces
πŸ… 1/2 lb penne
πŸ… 2 1/2 tbsp pesto
πŸ… 1/4 cup heavy cream (or half-and-half)
πŸ…Spices: Oregano; rosemary; thyme; Italian seasoning; fresh parsley

Create

  1. Season chicken with salt and pepper, pan-fry in olive oil.
  2. Boil water; cook penne.
  3. Remove chicken from pan (place to side), pan-fry asparagus in olive oil, season with salt and pepper.
  4. Add cooked chicken, pesto, heavy cream, oregano, thyme, Italian seasoning, and rosemary to the asparagus; simmer.
  5. Add cherry tomatoes, mix; Add penne, mix; Add additional pesto, if necessary.
  6. Garnish with freshly chopped parsley.
