HAM & PINEAPPLE FRIED RICE

Welcome to one of my FAVORITE. RECIPES. EVER! This stuff is addictive and I don’t even know why. Maybe it’s the soy sauce or the egg or the ham but you start eating it and ya just can’t stop. But I’ll let you figure that out for yourself.

Prep Time: 50 minutes

Yields: 4 servings

Ingredients

🍍1 Green pepper, diced
🍍1 Sweet onion, diced
🍍3 Carrots, sliced and quartered
🍍 Ham (1/3 lb)
🍍 3 eggs
🍍 Pineapple, 1 cup diced
🍍 White rice (1.5 cups uncooked)
🍍 Soy sauce (to taste)
🍍 Sesame oil, 1 tsp
🍍 SPICES: Oregano, thyme, rosemary, pepper, and parsley

Create

  1. Add olive oil to large skillet or wok. Dice green pepper, sweet onion, and carrots. Add to skillet and sauté until soft.
  2. Cook your rice. I use Publix instant white rice, it only takes five minutes. Keep to the side.
  3. Dice up the ham (I get Publix sweet ham from the deli) and add to skillet; sauté with veggies.
  4. Chop up pineapple and save for final step. Then beat the 3 eggs in a bowl.
  5. Shift all the veggies/ham to one half of the skillet. Add eggs into the other half of the skillet. Scramble the eggs separate from the veggies; once scrambled, mix eggs among the veggies in the skillet.
  6. Add desired spices to the skillet. Add cooked rice into skillet and pour desired level of soy sauce over it. Add a splash of sesame oil for extra flavor. Mix everything together in skillet with care not to spill (if it’s anything like mine, it’s almost overflowing at this point!)
  7. Add pineapple and mix everything together well. Cook until pineapple is warm. Serve and enjoy!

If you have peas, they are a good fit to add in as well. There’s also another version of this, chicken teriyaki fried rice, that’s the same except your chicken is marinated in teriyaki sauce and substitute that for the ham and pineapple.
