EASY SUMMER PASTA SALAD

If you’re looking for an easy and delicious pasta salad, this is it. Very few ingredients but lots of flavor!

So the whole point of this recipe is a pasta salad you can throw together, hopefully with stuff you already have.

It’s perfect for a barbecue, to go with burgers, or even for friendsgiving. The ingredients below should produce enough for 10 servings (if eaten as a side).

Prep Time: 20 minutes

Yields: 10 servings

Ingredients

🥒 Bowtie pasta (1 box)
🥒 1 Cucumber
🥒 2 Red bell peppers
🥒 1/2 Sweet or red onion
🥒 Italian dressing (1/3 cup)
🥒 Fresh parsley, chopped (2 tbsp)
🥒 Salt and pepper to taste


*NOTE* This meal turns out best when prepared 6-24 hours in advance so the ingredients have time to marinate together. (If you make it last minute like i did, it’s still delicious, just not as much so.)

Create

  1. Cook pasta as directed. Meanwhile, dice the peppers, onion, and cucumber.
  2. Drain pasta, let cool to room temperature.
  3. Once cooled, add cucumbers, peppers, and onions. Slowly add Italian dressing, ensuring you don’t saturate the pasta salad too much – you don’t want a puddle at the bottom.
  4. Add the parsley, salt, and pepper. Mix everything well. Then refrigerate until ready to eat.

*TIP* – If you make it last minute (or even if you don’t want to wait for the noodles to cool to room temp) stick a bunch of ice cubes in the strainer with the pasta. Mix the ice/pasta around with a spoon until the noodles are cool. Then remove ice before mixing in veggies.
