
This recipe serves as the perfect go-to side dish for any meat, seafood, or even pasta entree. The key is to cut the zucchini razor thin, season well, and then you and your guests won’t even notice you’re fulfilling your vegetable serving. You’ll want to make plenty of this; I can promise that you (and your guests) will keep going back for more.
Serves: 2 | Cook Time: 30 minutes
INGREDIENTS:
- 🥒 2 zucchini, sliced
- 🥒 1-2 tbsp olive oil
- 🥒 2 tsp paprika
- 🥒 1 tsp black pepper
- 🥒 1 tsp garlic powder
- 🥒 1 tsp parsley
- 🥒 Dash of cayenne pepper
CREATE:
- Preheat oven to 400 F.
- In a medium bowl, mix olive oil, paprika, black pepper, garlic powder, cayenne pepper, and parsley.
- Place a sheet of foil on a baking sheet. Place the zucchini slices in a single layer on the sheet.
- Bake for 20-25 minutes, flipping halfway. Wait til they are nice and crispy before pulling out from the oven. Enjoy!
