Seeking a delicious, filling, and flavorful seafood recipe that’s quick and easy to make? Well I’ve got you covered!

Prep Time: 30 minutes | Yields: 2 servings
INGREDIENTS
- 2 mahi-mahi filets
- 1 egg, beaten
- 1/4 cup all-purpose flour
- 1/2 cup coconut flakes
- 2 tbsp crushed pecans
MANGO SAUCE
- 1 mango, peeled and diced
- 1/8 cup chicken broth
- 1 tsp brown sugar
- 1 garlic clove, minced
- A dash of soy sauce (less than 1 tsp)
- A dash of black pepper
- 1 tbsp fresh basil, chopped
- For the sauce, in a small bowl combine mango, chicken broth, brown sugar, garlic, soy sauce, black pepper and basil. Mix and refrigerate for 20 minutes.
- You will have 3 separate bowls for your flour, egg, and coconut/pecan mix. Dip the filet in the flour, then egg, then coconut/pecans.
- Fry the filet in olive oil over medium heat for 4-5 minutes on each side.
- Serve with the mango sauce and enjoy! Serve it with the mixed red pepper rice and best sweet potato fries for a flavorful combination.
