
This has been one of my favorite desserts for YEARS. My mom always makes these around the holidays and when we have company so they have always been a special treat. I finally learned how to make them myself and they are surprisingly easy for how delicious they taste!
Prep Time: 20 minutes | Bake Time: 40 minutes | Chill Time: 2-3 hours
Yields: 20 squares

Ingredients
- 1 package of cream cheese, softened (8 oz)
- 1/2 cup sugar
- 1 egg
- 1 roll refrigerated Pillsbury chocolate chip cookie dough (16.5 oz)
Create
- Preheat oven to 350 F. In a small bowl, beat egg, cream cheese, and sugar until well blended.
- In a greased 8×8 inch pan, spread one half of the cookie dough across the bottom. Press it evenly along the bottom of the pan to create a nice foundation. You may have to use a little more than half the dough.
- Pour the cheesecake batter over the top of the cookie dough; spread evenly. Break apart the remaining cookie dough and sprinkle on top like you would sprinkle cheese over the top of a casserole.
- Bake 35-40 minutes or until golden brown. Cool for 30 minutes; then refrigerate for at least 2-3 hours. (I usually chill it overnight). Depending on how large/many bars you want, cut out 16 (4×4 rows), 20 (4×5 rows), or 25 (5×5 rows). KEEP REFRIGERATED AND ENJOY!
