CAPRESE SALAD

Such a simple recipe that is sure to wow your friends and family! Tomatoes, basil, and mozzarella cheese – what’s not to love?

Prep Time: 10 minutes | Yields: 12

ingredients

  • 3 tomatoes, sliced (I use tomatoes on the vine)
  • Mozzarella cheese, sliced
  • 12-16 fresh basil leaves
  • Olive oil
  • Balsamic vinegar
  • Salt & pepper

  1. On a large plate or serving dish, place sliced round cheese pieces in a circular display.
  2. On each cheese slice, add a tomato slice and then a basil leaf on top.
  3. When ready to serve, drizzle olive oil and balsamic vinegar over the top of the salad. Sprinkle salt and pepper over the top.

tips

  • If you are preparing the dish early to eat later in the day, wait until serving time to add the oil, vinegar, salt, and pepper. This way you can cover in plastic wrap and refrigerate without losing and of the oil vinegar, or spices and it will be fresh at the time of serving.
  • I think the best part of this dish is the fresh basil, thus it is best NOT to skimp on the basil! I like to tear up some leaves and add additional pieces to each salad.
